    Standard Baking Co. is a bakery without spin. You won’t find art work on the walls, fancy coffee drinks or deli sandwiches. The bread and pastry sell themselves. Standard isn’t a brand, it’s a philosophy—good food should reflect the essence of the freshest ingredients available. The breads and handmade pastries are fresh, delicious, unfussy, and appealing to the eye. Everything is made from scratch with the intention that it will be eaten the same day—it may not even make it out the door.

    Standard Baking Co. began in 1995 in a tiny storefront on a cobblestone alley. Five years later it moved to its current location—a historic warehouse on Portland’s bustling waterfront. The breads are baked in a twelve-ton masonry oven and Viennoiserie and a myriad of other confections are prepared in a temperature-controlled pastry room. Without any walls separating the baking area, the retail shop is filled with a constant hum of activity. It is great place to start the day with a hot cup of coffee and buttery, flaky croissant.
